Asparagus with Bacon and Goat Cheese Recipe

Tonight I made one of Walter Scheib, The American Chef's, recipes.  My husband, Bill,  loved it and asked that I make sure that I don't forget how I made it.  I thought I'd share it here.   It's a wonderful use for the fresh asparagus from your CSA shares.  

Asparagus with Bacon and Goat's Cheese 
  • 6 slices of bacon
  • 2 pounds asparagus(trim off tough ends)
  • 2 tablespoons plus 2 teaspoons olive oil
  • 3 ounces goat cheese(room temperature), crumbled
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon grated lemon peel
  1. Cook bacon until browned. Drain on paper towels and crumble
  2. Coat asparagus well with 2 tbsp olive oil and salt and pepper.
  3. Place asparagus on sheet pan and roast in a 475 degree oven until fork-tender, approximately 5 – 7 minutes.
  4. Remove and place on serving platter. 
  5. Mix together lemon juice and 2 tsp. olive oil. Drizzle over asparagus.
  6. Sprinkle with goat's cheese and bacon.
  7. Garnish with grated lemon peel.
